Garçon Bleu represents premium hospitality at its core—a refined French restaurant we developed and delivered as part of the Sofitel Adelaide project, positioned on Level 9 with panoramic views across Adelaide's CBD and the Adelaide Hills.
The restaurant showcases South Australian produce through French culinary technique, with vintage-chic interiors featuring blue velvet finishes and modern art throughout. Under Chef Gianni Delogu, Garçon Bleu was named a finalist in the 2025 AHA SA Hotel Industry Awards for Excellence in the Restaurant Accommodation division.
This wasn't simply tenant fit-out work. Developing a destination restaurant within a five-star hotel requires coordination across design, kitchen infrastructure, service flow, and operational requirements from day one. Every element—from the kitchen's technical specifications to the dining room's sight lines and acoustics—needed to support the level of service premium French dining demands.
The result is a restaurant that operates seven days a week, offering breakfast, lunch, and dinner, with the capacity and infrastructure to maintain consistent quality at scale. It demonstrates our capability to deliver hospitality venues that meet exacting operational standards while creating memorable dining experiences.
